Denise’s Crockpot Lemon Chicken
My good-food-friend Denise brought me her famous crockpot lemon chicken, along with its rich juices, shortly after I birthed my daughter. This was exactly what I needed.
She cooks a whole chicken every week, often using this very recipe. I love the lightness of the lemon.
This easy lemon chicken works in any season. Keep it as is for warmer weather fare and pair it with more root vegetables and legumes for the winter months.
Sidenote: I didn’t realize that she makes this without adding any water until she sent me her recipe. It produces a few inches of flavorful liquid. Yum! You learn something new every day, aye?
Prep Time: 15 minutes Cook Time: 6 hour minimum
INGREDIENTS:
1 whole pastured chicken
3 medium onions
1 lemon
Fresh rosemary and thyme
3 medium carrots
3 medium potatoes
4 Tablespoons butter or olive oil
Sea salt and pepper to taste
DIRECTIONS:
Place 3 medium onions cut in 8ths in bottom of crock pot.
Place whole rinsed and patted dry chicken on top of onions.
Place a quartered lemon with sprigs of fresh rosemary and thyme in the cavity of the chicken
Rub butter or olive oil over chicken
Sprinkle chicken generously with herbs of choice depending on what you have: sea salt, pepper, garlic powder, rosemary, thyme, parsley, herbs de Provence.
Add cut up carrots and potatoes, tossed with olive oil plus salt and pepper.
Cover and cook on low until desired doneness, usually for at least 6 hours. Denise says it’s done when the legs come off easily when wiggled.

Tip 1: Don’t have a crock pot? Instapot works in place of a crock pot.
Tip 2: Craving soup? Add broth or filtered water and voila!
